Chili

1 lb ground beef
1 large onion, chopped
1 clove garlic, chopped
2 cans kidney beans
1 Tbsp chili powder
1 tsp salt
1/2 tsp pepper
32 oz tomato sauce

Brown the meat and add the onion and garlic and cook until done. Add the chili powder, salt, and pepper to this and cook for a couple of minutes. Add the beans and tomato sauce and simmer for 30 minutes.

  1. Excellent. This is what I'm talking about!

    If you have the time to spare, I like to pour in a half a bottle of a nice dark beer and let it simmer another couple of hours. The additional hours get rid of the extra liquid added (as well as helping the meat absorb more of the spices) and the beer adds a nice flavor. You still only want to cook the beans for 20-30 minutes, though, so I usually put them in at the end.

    Oh! Also, if you're looking for a base to pour the chili over, rice is the classic starch choice. And it's delicious. But if you want to mix it up, throw the chili over some spaghetti instead. Surprisingly good.

    Man I love chili.
